Fireside is MIRA’s dining room. Open for lunch and dinner, and led by chefs José Luis Hinostroza and Tomás Gastélum, the kitchen focuses on Baja comfort food.
The dishes are bold and ingredient-driven, inspired by the flavors and products of the region. The offering changes twice a year, shaped by the warmer and cooler seasons.
Beverage service is provided by the Poolside bar, with a program built around housemade vermouth spritzes, seasonal mulled wines, and a thoughtful wine list highlighting small-batch, locally produced labels across a range of styles.
Every month, we invite a local chef and winemaker to take over our kitchen and bar. The afternoon is à la carte, with wines served by the glass or bottle, and menus that reflect each guest’s unique style.

Born in San Diego to a Mexican family, José Luis Hinostroza was shaped early by agricultural landscapes and a close connection to food. He trained in some of the world’s most influential kitchens, including Alinea in Chicago, Maaemo in Norway, El Celler de Can Roca in Spain, and Noma in Copenhagen.
After the Noma Mexico pop-up, he decided to stay in Tulum and became chef and owner of ARCA, a restaurant known for its product-driven, open-fire cooking. Under his direction, ARCA has been recognized across The World’s 50 Best and Latin America’s 50 Best lists, for both its restaurant and bar, with additional recognition from the Michelin Guide.
At Fireside, José Luis brings this experience to the Valle de Guadalupe, offering a focused expression of Baja comfort food shaped by product, technique, flavor and place.
A native of Mexicali, Baja California, Tomás Gastélum is a chef whose approach is grounded in hands-on experience and a deep connection to the region. He trained in the kitchens of the Valle de Guadalupe, including Malva and Animalón, before joining ARCA in Tulum, where he quickly rose to become Head Chef and helped guide the restaurant to Latin America’s 50 Best.
He later spent time at Noma in Copenhagen, deepening his knowledge of fermentation and preservation. At MIRA Fireside, Tomás brings a passion for product sourcing and a thoughtful use of technique that reflects his perspective on Baja’s ingredients and identity.
